From 21 July to 14 August ItCooking is engaged in a series of Food Festivals abroad so it is not operational in the Fiano headquarters, we apologize, we will still be happy to answer your reservations.

Two Days Intensive


The 2 Days Intensicve Cooking Course is for people who want to live a deeper and more detailed kitchen experience.
Price for ItCooking two days course is € 490 per participant, is inclusive of
  • two nights’ accommodation at Villa Saladini or in a nearby hotel (based on double occupancy).
  • two intensive cooking sessions guided by our chef (in English) and practice,
  • lunch or dinner after class,
  • prosecco. selected wines and amaro included , all food ingredients, taxes.

Minimum booking 2 partecipants (10% discount for booking of 4 or more people).


Times of the lesson (total time, lunch or dinner included, about 5 hours)
glass of prosecco presentation of the menu • preparation of dishes • lunch/dinner on the terrace of the villa (wine included) • coffee • grappa

Here some of our most popular menus:

  • Pasta: Home made pasta - Lasagna, Tagliatelle, Ragù Bolognese, Basic Tiramisù.
  • Classic: Crostini toscani, Gnocchi alla pommarola, Saltimbocca alla romana, Biscottini di Prato
  • Vegetarian:  Risotto milanese, Parmigiana, Torta della nonna.
  • Autumn: Bruschetta, Pici all’aglione, Chicken or Guinea fowl alle olive, Panna cotta.
  • Fish: – Riso o Spaghetti al nero di seppia (squid ink), Pesce spada alla Palermitana, Cannoli siciliani.
Vegetarian and gluten free menus are available.

Every day our chefs will guide you through different aspects of the Tuscan cuisine, sharing their secrets with you and guiding you to discover new flavors. Under their guidance you will learn to distinguish the varieties of breads, cheeses and meats from different areas of this richly historical region.
Each day we explore a complete menu that addresses the ingredients, techniques and traditions of this area's kitchens.
You can choose to have lessons in the morning or in the afternoon.
Morning class from 10 AM to 2 PM with lunch.
Afternoon class from 4 PM. to 8 PM with dinner.
